Lunch on my second day of the On top of a bed of greens we’ve got - leeks, beetroot, white cabbage, and some quinoa boiled in water, creamed coconut, salt, cumin, turmeric, and bay leaves. To give it some extra flavour, nutrients, and creaminess, I’ve added a tbsp of raw apple cider vinegar, one tbsp of tahini, some black pepper, and some kelp powder. The kelp powder is the grey-greenish thing you see on the white cabbage, which contains high amounts of iodine - an essential trace mineral, crucial to proper function of the thyroid. Eating iodine rich foods ensures the thyroid to be able to do its work of managing metabolism, detoxification, growth and development. All super important parts of our overall well-being.
